Brinjal Kheer – Unique Dessert Recipe

Today I am going to share a very unique and yummy sweet dish – Brinjal Kheer. I tried making it for my family members last week and it turned out awesome in texture and taste!

Ingredients

  • Milk/ doodh - 1 litre
  • Brinjal/ baigan - 1
  • Khoya/ mava - 250 gms
  • Powdered sugar/ cheeni - 2 tablespoons
  • Cardamom/ elaichi powder - 1 teaspoon
  • Vanilla essence - 1 teaspoon
  • Chopped almonds/ baadam as required for garnishing

Instructions

  1. Boil the milk and meanwhile peel and grate the brinjal. Add grated brinjal to the milk and cook it.
  2. Add khoya in a pan on medium flame and roast it.
  3. When milk get reduced and brinjal is getting soft, add khoya, vanilla essence and cardamom powder.
  4. Switch off the flame and add sugar and mix it nicely.
  5. Refrigerate the kheer for an hour. Garnish it with almonds.
  6. Delicious 'Brinjal Kheer' is ready to be served.
