Brazilian Carrot Cake is a gorgeous carrot cake that is so easy to make. The homemade chocolate icing is something deliciously different and goes surprisingly well with carrot cake and it is perfect to be served with tea or coffee.

Brazilian carrot cake is a super simple recipe and the carrots are actually pureed into the batter so it is completely smooth. They add a perfect subtle sweetness and a beautiful orange color and it is also eggless.

Ingredients

  • Carrots(peeled and sliced) - 2
  • Flaxseeds powder - 1 &1/2 tablespoon
  • Olive oil - 1/2 cup
  • Powdered sugar - 1 cup
  • Maida -1 cup
  • Baking powder - 1 tablespoon
  • FOR ICING: Butter - 1 tablespoon
  • Brown sugar - 1/2 cup
  • Milk (cold) - 1/2 cup
  • Cocoa powder - 1/2 cup

Instructions

  1. Preheat oven to 175 degrees.
  2. Blend oil, carrots and flax seeds powder. If required add 1 or 2 tablespoon of water to form a thick paste and pour the mixture in a mixing bowl.
  3. Sieve the flour, sugar, baking powder in the same bowl of the carrot mixture and mix well again. If needed add 2 to 3 tablespoon water to make it into falling consistency.
  4. Grease and dust the baking tray and pour the batter into the prepared baking dish.
  5. Bake in preheated oven for 25 to 30 minutes.
  6. Meanwhile make the icing by placing the butter, brown sugar, cocoa powder, milk in a pan. Stir continuously to almost boiling on medium high heat until it thickens.
  7. When the cake is baked, remove from oven and immediately spread the icing evenly over the top.
  8. Enjoy the Brazilian Carrot Cake over tea-time.
