Bharwan Baingan Aloo Curry
Ingredients
- Medium size Brinjal/Eggplant - 250 gms
- Potatoes - 2 (cut in round shape)
- Oil - 3-4 tablespoon (3 tablespoon for frying and 1 tablespoon for preparing stuffing)
- Jeera/Cumin seeds - 1/2 tablespoon
- Hing/Asafoetida - A pinch
- Red chili powder - 1/4 tablespoon
- Turmeric powder - 1/4 tablespoon
- Garam Masala powder - 1/4 tablespoon
- Coriander powder - 1/4 tablespoon
- Sauf/ Fennel seeds - 1/4 tablespoon
- Amchur powder - 1/4 tablespoon
- Grated ginger - 1 inch long piece
- Salt to taste
- Chopped green coriander leaves for garnishing
Instructions
- Wash the brinjals and remove their stems. Wash and peel the potatoes too.
- Cut the brinjals in 4 parts from stem in such a way so that the bottom part should remain joined. This cut is suitable for stuffing spices in brinjals.
- Mix all above mentioned spices (coriander, turmeric, garam masala, red chilli, amchur powder and saunf) and salt. Add 1 tablespoon of oil and grated ginger and mix well. Stuffing is ready now.
- Fill the spices in brinjals with the help of a spoon and set them aside.
- Heat oil in a pan on medium flame and add jeera and hing to it. Wait till the jeera crackles and then add round shaped chopped potatoes to it.
- Saute the potatoes for 3-4 minutes and then add stuffed brinjals to the pan.
- Cover the pan and cook the brinjals for 8-10 minutes.
- Flip the brinjals and let the other side be cooked for another 8-10 minutes with a covered lid.
- Check the brinjals now. If the brinjals at the center are cooked, then shift them to the corners and bring the corners one to center.
- Switch off the flame now and garnish the curry with coriander leaves.
- Serve hot with chapati/ dal rice.
