Beguni or brinjal fritters are a great snack and an accompaniment with daal and rice. 

Beguni or brinjal fritters are pakoras made with brinjal. This is a traditional dish from Bengal and loved by all. This recipe for beguni or brinjal fritters goes very well as an evening snack with tea or can be enjoyed along with any meal of the day.

Ingredients

  • Brinjal (long) - 3
  • Besan - 4 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Chilli powder - 1/2 teaspoon
  • Salt - to taste
  • Hing - a pinch
  • Water
  • Oil to deep fry

Instructions

  1. Discard the crown of brinjal and cut them in vertically thin slices.
  2. In another bowl add all the ingredients except oil and brinjals and make a batter.
  3. The batter should not be runny. It should be a bit thick in consistency.
  4. Heat oil in a pan, coat the brinjals in the batter and deep fry.
  5. Fry them on both sides until they turn crisp.
  6. Serve beguni or brinjal fritters as a side dish along with dal chawal or khichdi.
