Bajre ki roti is very popular winter speciality of Rajasthani cuisine.

Bajre ki roti is a delicious flat bread made from pearl millet flour/ bajre ka atta. Bajre ki roti is a storehouse of nutrition which is rich in fibre, proteins and essential minerals. Bajre ka aata /pearl millet flour is a healthy gluten-free alternative to wheat. It is served hot with lehsun ki chutney or any green vegetable sabzi for lunch or a mid-morning snack.

Ingredients

  • Bajre ke aata/pearl millet flour - 1 cup
  • Cold Water/pani - as required
  • Salt - a pinch
  • Homemade ghee - 1 teaspoon

Instructions

  1. Add bajre ka aata/pearl millet flour to a big bowl and add salt to it. Mix well.( Add little salt and try to avoid to add a lot as then the taste of roti gets sour and bajre ki roti tastes good only if its a bit sweet)
  2. Add water little by little, mix well and knead a stiff smooth dough.
  3. Knead the dough well for 2-3 min.
  4. Make round balls (small or big depends on the size of roti you want to make) from the dough.
  5. Start heating the tawa/skillet on medium flame.
  6. Sprinkle some bajre ka aata/pearl millet flour on the circular rolling board commonly known as chakla. Then place the ball on it and slightly roll it with hands by pressing on the sides.
  7. Sprinkle some flour on the rolled dough (so that the rolling pin commonly known as belan do not stick) and then roll it with the help of rolling pin/belan. Roll the roti slowly and carefully. If the sides cracks, join it back with the help of hands.
  8. Place the rolled roti on tawa and cook it from both sides.
  9. Transfer the roti on medium flame/sigri and roast from both sides.
  10. Apply homemade ghee on the hot crisp bajre ki roti.
  11. Deliciously hot bajre ki roti is ready to be served with lehsun ki chutney.
