Ingredients

  • Boiled and mashed potatoes/ aloo - 5-6
  • Spring onions(chopped) - 1/2 bowl
  • Whole wheat flour/atta - 2 bowls
  • Green chili(chopped) - 1 tablespoon
  • Onions/pyaaz(finely chopped) - 1/2 bowl
  • Ginger(chopped) - 1 teaspoon
  • Kasoori methi - 1 teaspoon
  • Salt/ namak - 1/2 teaspoon
  • Red chili powder/ lal mirch - 1/2 teaspoon
  • Garam masala - 1/4 teaspoon
  • Chaat masala - 1/4 teaspoon
  • Mango powder - 1/4 teaspoon
  • Asafoetida/heeng - 1 pinch
  • Oil/ tel - 3-4 tablespoons
  • Coriander leaves/ dhaniya patta - a handfull

Instructions

  1. DOUGH - Take a bowl and add whole wheat flour, salt, 1 tablespoon of oil and mix well. Add water slowly to the above mixture and make a normal paratha like dough. Rest the dough for 10 minutes.
  2. STUFFING - Heat 1 tablespoon of oil in a pan on a medium flame and add chopped onions to it. Saute for a while and add spring onions, chopped chilies, ginger to it. Add boiled and mashed potatoes, all the spices, mix well and then turn off the flame. Stuffing for paratha is ready.
  3. Make medium size circular balls from the dough and meanwhile, heat a non-stick tava on medium flame.
  4. Roll a normal roti from the portions of the dough and place 1 teaspoon of stuffing over it. Use rolling pin/roller for making the paratha.
  5. Close all the ends of the roti making stuffed roti/paratha. Roll it to a medium size circular paratha while applying some dry flour for dusting.
  6. When the tava gets hot, place the paratha on it. Cook the paratha on a medium flame from both sides by applying oil to it.
  7. Transfer the cooked paratha to a serving plate.
  8. Serve hot aloo ka paratha with pickle/curd.
